  • Beta-carotene monooxygenase 1 (BCMO1) enzyme plays a key role in the conversion of beta-carotene into the active form of vitamin A. β-carotene is a form of vitamin A that is converted into retinal by β-carotene dioxygenase in the mucosa of the small intestine.
  • The antioxidant, Beta-carotene is found in plants that have fruit or vegetables that are an orange or red color. Retinoids can be found in cod liver oil, grass-fed beef, grass-fed beef liver, grass fed butter, organic heavy cream, shrimp, and wild caught fatty fish. Vitamin A can be found in boiled spinach, blue-fin tuna, broccoli, butternut squash, canned pumpkin, cooked carrots, cantaloupe, goat cheese (hard), kale, mackerel, mango, and sweet potatoes that are boiled without the skin.
